97% of Independent Restaurants and Bars Outside Major UK City Centres Are Invisible to AI

A landmark study by booteek.ai has revealed that 97.4% of independent restaurants and bars in UK second cities are completely invisible to AI assistants — meaning they do not exist when consumers ask ChatGPT, Perplexity, or Google AI where to eat or drink.
The study, the largest AI visibility audit ever conducted for UK hospitality, probed 1,211 independent venues across 8 cities using AI assistants with real consumer questions. The findings are stark: outside established city centres like Manchester, AI simply cannot find independent venues.
Of 429 venues probed across Leeds, Birmingham, Liverpool, Edinburgh, Glasgow, and Belfast, just 11 were mentioned by any AI assistant. Liverpool scored 100% invisible — not a single independent venue appeared.
This matters now more than ever. Google has just launched Ask Maps — conversational AI powered by Gemini, built directly into Google Maps. Already live in the US and India, Ask Maps lets users ask "where should I eat tonight?" and receive AI-generated recommendations. Millions of tourists arriving in the UK this summer will already be using it. If a venue's Google Business Profile is incomplete, Ask Maps cannot recommend it.
Meanwhile, according to Graphite.io, AI tools now generate 45 billion monthly sessions worldwide — 56% of total global search volume. 37% of consumers now start searches directly in AI chatbots instead of Google.

The data reveals a two-tier crisis: even in Manchester, where independent venues have stronger digital profiles, 77% are invisible. In second cities, the figure rises to 97.4%. The gap between major city centres and the rest of the UK is catastrophic.

The Global Context: Food & Drink Is the Most Vulnerable Sector
Data from Ahrefs (chatgpt-vs-google.com) shows that Food & Drink has the highest dependency on search traffic of any industry sector at 66.9%. Yet Google's overall traffic share has declined 3.4 percentage points in eight months.
